In the kitchen with Deana - Double Chocolate Oatmeal Cookies

Baking is one of my favorite things to do.  Our guests always look forward to homemade cookies and a glass of iced tea or a cup of coffee in between plays or when lounging around the pool.

For chocolate lovers, I make these double chocolate oatmeal cookies.  I always like to give credit to the originator of recipes but I must confess, this recipe has been used so many times that I no longer have that information on my well worn copy.  

Here is how to make them:

1 1/2 cups sugar

1 cup butter

1 egg

1 teaspoon vanilla extract

1 1/4 cups all purpose flour

1/3 cup cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 cups quick oats

6 ounces semisweet chocolate chips

1/4 cup water

Combine sugar and butter in a large bowl.  Cream together until fluffy.  Beat in the egg and vanilla.

Sift together the flour, cocoa, baking soda and salt.  Stir into the creamed mixture.  Add the oats and the chocolate chips.  The dough will be stiff.  Add 1/4 cup water as needed to moisten the dough.

I always refrigerate my dough for at least 30 minutes.  

Preheat oven to 350 degrees.  Spoon dough into tablespoon size balls and bake on lightly greased cookie sheet.

Bake 10 to 12 minutes.  Enjoy!
